Seasonal produce guide for professional kitchens
New arrivals this month are forced rhubarb from Yorkshire, blood oranges from Sicily and Seville oranges from Spain. The first white asparagus from France will also arrive later in the month.
The star this month is Yorkshire forced rhubarb. Apples and pears are still eating well but are coming out of store rather than picked fresh. Out in the fields, brassicas thrive in this colder weather.
The first blood oranges arrive from Sicily this month. They will last into March. Also Seville oranges from Spain - short season and over by February.
